Résumé : The project WAL’PROT 6 ULB aims to develop numerical tools and models of one or several process/ses of interest (High-moisture extrusion cooking, High-Pressure Homogenization, etc.) through hybrid modelling (phenomenological models and neural network), to accurately depict “black-box” processes and improve scientific understanding and industrial development of alterative protein food.
