Résumé : An extension of the model by Richelle et al. (2014a) is developed to describe the reserve carbohydrates metabolism during yeast cultures. The model parameters were obtained via nonlinear least squares identification. It is validated with experimental data and successfully predicts the dynamics of accumulation and mobilization of trehalose and glycogen during all periods of cultures, even in crossvalidation. This extension, on the one hand, allows the quantitative description of the storage carbohydrates metabolism in yeast cultures; on the other hand, it will be valuable for the determination of culture conditions aiming at maximizing yeast production while guaranteeing the accumulation required amounts of trehalose and glycogen.
