Résumé : Glutathione (GSH: L-g-glutamyl-L-cysteinyl-glycine) and related non-protein thiols are implicated in several cellular functions, including defence against oxidative and electrophilic stress, redox homeostasis and protection against xenobiotics. This article examines the many uses of GSH: as a chemical reagent, a drug, an additive in nutrients and cosmetics and as a biomarker in the fields of clinical sciences, toxicology and the environment. We also look at applications of GSH in the nanotechnology arena.
