Résumé : | Xanthines are the most known alkaloids present in coffee plants. The studies about their metabolism and their pharmacological activities have started several years ago to provide more information about the chemical properties of the most popular beverages in the world, such as coffee or tea. This work consisted in performing metabolomic analysis based on LC-(HR)MS data to investigate the metabolism of xanthines in the leaves and in the fruits of Coffea anthonyi, Coffea arabica and Coffea canephora. While C. arabica and C. canephora have been widely studied, only few information is available for C. anthonyi. However, due to the wide climate changes, this species growing at low altitudes could be a promising species to make coffee beverages. The expression of genes for proteins involved in xanthines biosynthesis has also been investigated by performing RT-qPCR. An overview of the histolocalisation of xanthines in the different organs of Coffea arabica flowers was also provided. |
